Lyndsey Eckenrode joined the LSU performance nutrition staff in January 2023 and is in her second season with the Tigers.
Before starting at LSU, Lyndsey served as the Assistant Director of Sports Nutrition for Olympic Sports at West Virginia University. She has participated in athletics at Ole Miss, Ohio State, and the UFC Performance Institute.
Born and raised in Bloomsburg, PA, Eckenrode earned her undergraduate degree in nutrition at Ole Miss and completed her dietetic internship and master’s degree in health and rehabilitation sciences at Ohio State University. She is a Registered Dietitian.
Eckenrode enjoys spending time with family and friends, working out, playing pickleball, and trying new local restaurants in her spare time.
